What was this green paste which I ate in Portugal?
I had a trip to Lisbon. The tour guide said it was a very traditional Portuguese restaurant. It was a side dish. It was a green paste. I have no idea what it was. Maybe broccoli paste? Any knowledge is appreciated. Also – Why are potatoes so much better in Europe? At least, they are in Portugal and Spain. They are bright yellow and very tasty. It was not pesto. It was a huge amount of what looked like a mashed potatoes, green color. It was not good at all. It was like some green leafy vegetables mashed and mixed with God knows what.

This is certainly not because the pesto is pesto sauce Italian … What you ate was ESPARREGADO is a sort of puree of spinach with garlic, olive oil and cream sometimes, it is very good and very healthy. It is a dish that goes well with steaks, grilled meats, etc., an alternative to the boring (and unhealthy) chips. Potatoes, you've probably eaten apples Portuguese earth, some of them still come from traditional producers who prefer traditional agriculture, even without many products chemicals and artificial fertilizers.
