Internationally acclaimed Oaxacan chef Pilar Cabrera (NY Times, Bon Appetit) has expanded the range to its famous cooking school from downtown Oaxaca, the Casa de los Sabores (Flavors of Home). As of now, the indigenous Zapotec Chief Reyna Mendoza joined the team Pilar, offering a new dimension to the already stellar selection of options available for curious foodies, who have a keen interest in Mexican cuisine and chefs from around the world looking to add to their existing menu.

Hometown Teotitlà ¡n del Valle, Reyna brings knowledge, skill and experience at the Casa de los Sabores. She specializes in preparing dishes Zapotec.

Reyna worked with people like Rick Bayless and Ricardo Muñoz ± oz Consequently, his pedigree is impeccable, combining technical sciences gastronomic experience with life in the kitchen of his modest matriarchs mother and other family of gourmet. And today, members Oaxaca Bed & Breakfast Association has had the opportunity to learn for themselves.

Pilar invited colleagues from the Association to attend her cooking school, so that owners and managers of small hotels and bed & breakfast cottages in Oaxaca would be able to discover for themselves that Reyna can add holidays to every visitor to the city and central valleys. And for four hours, we grilled chopped and filled, and, finally, indulged in the fruits of our labor in this demonstration.

While we have prepared a complete comida, we focused on the preparation of three distinct types of Zapotec style tamales. The full menu consisted of:

1) Tamales de mole amarillo with chicken wrapped in corn leaves large stems;
2) Tamales de mole negro with chicken, banana leaf;
3) Tamales de mole negro with quesillo in banana leaves;
4) Tamales black bean, flavored with avocado leaves, wrapped in maize straw;
5) Salsa dried tomatillo and chile Oaxaca
6) salad of organic lettuce, locally grown tomato, avocado and green onion, cilantro and poblano chili dressing;
7) mango sorbet served with pecan cookie.

And of course, the end of the food preparation as above, and throughout la comida, there were towers necessary "salud", while drawing … Corona beer and mezcal village.

More than providing an opportunity for us to learn more about Reyna and his ability to teach, and discover for ourselves the exquisite flavor combinations and ingredients Zapotec cuisine, it was one of the rare opportunities for members of the Oaxaca Bed & Breakfast Association to tell stories, laugh and spend a day outside the office.

Depends on what you expect from your trip. If you really want to make the most of your trip, save time, get a true understanding of Rio de Janeiro, look beyond the ways of Christ Redeemer and Sugar Loaf, having someone taking care of every detail for a great time, you really should hire a tour guide. On the other hand, if you like to explore places, make their own way (including a kick out of getting lost, wasting time looking for directions, ignore some very interesting places free), you can go it alone. And for a group of 5 people you can book a tour guide with a van for only $ 300 per day (it's a very profitable). I stay at the Wyndham Rio Mar Resort in March and I was wondering if anyone knew If tour operators pick up from hotel for excursions? I know that the hotel has day trips, but I wanted to visit other places the hotel can not offer. I try to keep rent a car.
